Slow Cooker Bacon Fried Rice
Enjoy the convenience of a slow cooker to prepare this flavorful bacon fried rice. Perfect for busy days or when you want a fuss-free meal that's loaded with savory goodness.
Ingredients:
- 6 slices bacon, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 3 cups cooked rice, chilled
- 1 cup frozen peas and carrots
- 3 eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Green onions for garnish
Instructions:
In a skillet, cook diced bacon until crispy
Remove and drain on paper towels
In the same skillet, saut diced onion and minced garlic until translucent
Transfer cooked bacon, onion, and garlic to a slow cooker
Add chilled cooked rice and frozen peas and carrots to the slow cooker
Mix well
In a separate bowl, scramble beaten eggs
Pour over rice mixture in the slow cooker
Add soy sauce, sesame oil, salt, and pepper
Stir to combine all ingredients
Cover and cook on low for 2-3 hours, or until heated through
Serve hot, garnished with chopped green onions
