Asian Chicken Noodle Soup
This Asian Chicken Noodle Soup is a comforting and flavorful dish that combines tender chicken, fresh vegetables, and delicate rice noodles in a savory broth infused with ginger and garlic.
Ingredients:
- 6 cups chicken broth
- 2 boneless, skinless chicken breasts, thinly sliced
- 1 tablespoon soy sauce
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 carrot, julienned
- 1 red bell pepper, thinly sliced
- 4 ounces shiitake mushrooms, sliced
- 4 ounces rice noodles
- 2 green onions, thinly sliced
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions:
Put the chicken broth in a big pot and set it over medium-low heat
Put the chicken breasts that have been cut up, soy sauce, minced garlic, and grated ginger in the pan
Let it cook for 5 minutes
Slice the red bell pepper, shiitake mushrooms, and carrot into thin strips
Let it cook for five more minutes
While that is going on, cook the rice noodles according to the directions on the package
Remove the water and set it aside
Put in the cooked rice noodles and sliced green onions after the vegetables are soft and the chicken is fully cooked
To taste, add sesame oil, salt, and pepper
Serve hot, and if you want, top with more green onions
