Avocado Cilantro Lime Farro Salad



This Avocado Cilantro Lime Farro Salad is a refreshing and healthy choice for a quick meal or side dish. The combination of creamy avocados, zesty lime dressing, and fresh veggies makes it a delightful addition to any meal.

Ingredients:

  • 1 cup farro
  • 2 avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 limes, juiced
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

Follow the directions on the package to cook the farro, then let it cool

Put the diced avocados, cherry tomatoes, red onion, and chopped cilantro in a large bowl

Add the olive oil, salt, and pepper to a different small bowl and mix them together using a whisk

Put the cooled farro into the big bowl with the other foods

Add the lime dressing to the salad and mix it all together

If you want, you can serve it cold and top it with more cilantro
