Strawberry Coconut Popsicles



This vegan strawberry coconut popsicle is a cool and creamy treat that is great for hot summer days. The flavor is great when sweet strawberries are mixed with creamy coconut milk.

Ingredients:

  • 2 cups strawberries, hulled and chopped
  • 1 can 13
  • 5 oz full-fat coconut milk
  • 1/4 cup maple syrup or agave nectar
  • 1 teaspoon vanilla extract

Instructions:

In a blender, combine strawberries, coconut milk, maple syrup, and vanilla extract

Blend until smooth

Pour the mixture into popsicle molds

Insert sticks and freeze for at least 4 hours or until solid

To release the popsicles from the molds, run under warm water for a few seconds
