Vegan Dulce de Leche Cookie Bars



Indulge in these irresistible vegan dulce de leche cookie bars, filled with layers of gooey sweetness and rich chocolate. They're perfect for satisfying your cravings without any animal products!

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup vegan butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup almond milk
  • 1 tsp vanilla extract
  • 1/2 cup vegan dulce de leche
  • 1/2 cup vegan chocolate chips

Instructions:

Preheat your oven to 350F 175C

In a mixing bowl, cream together the softened vegan butter, brown sugar, and granulated sugar until smooth

Add almond milk and vanilla extract, mix well

Gradually add the flour, mixing until a dough forms

Press half of the dough into the bottom of a greased 8x8 inch baking dish to form the base layer

Spread the vegan dulce de leche evenly over the dough layer

Sprinkle the chocolate chips over the dulce de leche layer

Crumble the remaining dough over the chocolate chips layer

Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown

Allow the bars to cool completely before slicing into squares
