Vegan Sweet Potato Kale Pizza



This vegan pizza features a cauliflower crust topped with savory sweet potatoes, hearty kale, and caramelized onions. A drizzle of balsamic glaze adds a touch of sweetness and depth of flavor.

Ingredients:

  • 1 cauliflower crust store-bought or homemade
  • 1 medium sweet potato, thinly sliced
  • 1 cup kale, chopped
  • 1 large onion, thinly sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup balsamic vinegar
  • 1 tablespoon maple syrup
  • 1/2 cup vegan cheese, shredded optional

Instructions:

Set the oven to 425F 220C and heat it up

Put the crust made of cauliflower on a baking sheet that has been lined with parchment paper

Put 1 tablespoon of olive oil in a pan and heat it over medium-low heat

Add the sliced onions and cook, stirring every now and then, for about 15 to 20 minutes, until the onions turn caramelized

Set the rest of the olive oil in a different pan and heat it over medium-low heat

Put in the kale and sliced sweet potatoes

Add pepper and salt

It will take about 8 to 10 minutes of cooking until the kale is wilted and the sweet potatoes are soft

Put the maple syrup and balsamic vinegar in a small saucepan and mix them together

Simmer on medium-low heat for about 5 minutes, or until the mixture has shrunk and become a little thicker

Cover the cauliflower crust with the caramelized onions

Cover with the cooked kale and sweet potato mix

Add vegan cheese on top if you want to

Pour the balsamic glaze that has been lowered over the pizza

After the oven is hot, bake the pie for 12 to 15 minutes, or until the crust is golden and crisp

Cut it up and serve it hot
