Quick Vegan Frijoles Molidos



Quick Vegan Frijoles Molidos is a flavorful and satisfying dish made from mashed black beans infused with aromatic spices. It's perfect for a quick weeknight dinner or as a filling for tacos, burritos, or enchiladas.

Ingredients:

  • 2 cups cooked black beans
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tomato, diced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1/4 cup water
  • Fresh cilantro for garnish

Instructions:

In a skillet, heat olive oil over medium heat

Add chopped onion and minced garlic, saut until translucent

Add diced tomato and cook until softened

Add cooked black beans, cumin, paprika, chili powder, salt, and pepper

Stir well

Pour in water and simmer for 5-7 minutes, stirring occasionally

Using a potato masher or immersion blender, mash beans to desired consistency

Adjust seasoning if needed

Garnish with fresh cilantro before serving
